Meet Chef Thaz

Thazjay Paddyfoot was born and raised in the cool hills of St. Ann, Jamaica, where he first found culinary inspiration through his father, a Master Pastry Chef of 30 years. After gaining early experience in entry‑level kitchen roles, he enrolled in HEART College’s four‑year Hospitality Culinary Program. Equipped with his degree, he steadily advanced from prep cook to Executive Chef at a five‑star all‑inclusive resort. His first U.S. role brought him to Cherokee Casino in North Carolina, and in 2019 he joined Aramark at Western Carolina University.

In 2022, Thazjay became Executive Chef at Lenoir‑Rhyne University in Hickory, NC, where he channels his passion for fresh, made‑from‑scratch cuisine influenced by flavors from around the world—especially the Caribbean. Some of his favorite dishes include Rice and Peas with Braised Oxtail, Conch Fritters, Jerk Chicken, and Creamy Mushroom Risotto. Outside the kitchen, he enjoys gardening, fishing, and spending time with his 6‑year‑old son, Thazjay Jr., who will soon enter second grade.
